Is there a guide out there for creating an AD forest for testing purposes?
Specifically I'd like to be sure how to join a separate domain tree to an
existing domain tree with proper DNS config. I can't seem to find
documentation for this.

You would basically just create a new domain in the existing forest.
You'd need to make sure DNS is working well and you can resolve the
existing domains (the forest root domain) for that. There is nothing
special about that.

Are there any concerns you have specifically?
