I would like to click the mouse to cause a sub-menu to open, rather
than have it open automatically when the mouse hovers over a menu
item. How do I make that change?

AFAIK, you can't make it not cascade the sub-menu. But you *can* cause the
sub-menu to "stick" by clicking on it. I find that to be very handy, rather
than depending on the hover.

Tweak UI, Mouse tab, set menu speed to slowest setting and click OK.

Tweak UI is available from:
http://www.microsoft.com/ntworkstation/downloads/PowerToys/Networking/...weakUI.
Right-click the TweakUI .inf file and select install. Should a notice
appear saying a disk is required, click OK and another screen appears. Click
browse, go to the folder containing Tweak and click OK and OK.
