I created a poster on Microsoft Publisher, dimensions 56x42. I have a large
commercial printer but Publisher will not let me increase the page size pass
36. It splits the poster up into separate sheets. How can I change it to
print correctly on one poster?

What version Publisher?
This article addresses large format printers, maybe it will help

PUB2002: Large Banners and Posters Printed in Separate Sections

Might try setting up a custom size in Acrobat or some other PDF creator.

Design it at 50% or even 25% and enlarge it when printing at the RIP.
