Alt+F9 will toggle the display of all field codes in the document (except
for XE and TC fields, which are formatted as Hidden text). If you close Word
with this option toggled off, it should stay off, but you can change the
setting explicitly in Office Button | Word Options | Advanced: Show document
content: "Show field codes instead of their values."
The markup area reserved for balloons is displayed only if the text contains
markup (comments or tracked changes). You can opt not to display comments
and revisions in balloons: Review | Tracking | Track Changes | Change
Tracking Options: Use balloons: Never (or click Balloons in the Tracking
group and choose "Show All Revisions Inline"). And of course, if you Accept
All Changes and Delete All Comments, you won't see any markup at all.
