In Word 2007, how do I access (navigate to) the Options dialog (as in
Word 2000)?

More specifically, in Word 2007, how do I enable: "Save => always
create backup copy"?

Office Button | Word Options. The setting you want is not in the Save
section, as you might expect, but rather in Advanced: Save.
