Gentlemen,

I would like to set up a dual-boot with two Red Hat-type distros (CentOS
5.0 and Fedora Core 6). What is the drill for setting up GRUB to handle
this, and how does one handle the two /boot folders required?

There are tons of discussions on this topic already, plus multiple
howtos around. Scrounge around http://www.tldp.org/.

Hint: If you're using grub, use a common /boot among all your distros.
