Turkey and White Bean Chili
This is my Turkey and White Bean Chili recipe. I won the 2001 Tribal Voice Chili Cookoff with it. Hopefully you'll enjoy it, too.
Ingredients:
2 lbs. of ground turkey
one 15 oz. can of great northern beans
one 15 oz. can of white beans
one 10 oz. can of diced tomatoes & jalapenos
one yellow onion
one green bell pepper
one Bermuda onion
one package shredded cheddar cheese
one 4.5 oz. package red chili mix1
one clove garlic
three tbps. masa (corn meal)2
one tsp. yellow curry
one bottle Cholula™ sauce3
one bottle Tabasco™ sauce
salt
pepper
Instructions:
Mince clove of garlic.
Chop yellow onion and bell pepper and saute until onions become clear. Remove from heat.
Brown 2 lbs. of turkey in pan on medium heat, adding salt and/or pepper to taste. Do not drain.
Place turkey, yellow onions, bell pepper, great northern beans, white beans, diced tomatoes & jalapenos in pot. Stir in red chili mix, masa (as a thickening agent), minced garlic and yellow curry. Cook on medium-high for 5-10 minutes, then lower to medium-low for 20-35 minutes.4 Add Cholula™ sauce to taste.
Chop Bermuda onion, serve with cheddar cheese and Tabasco™ sauce as garnish.
Serves 4-6.
Notes:
1 Available in the Mexican food section of your grocery.
2 Ditto.
3 Cholula sauce is Mexican hot sauce. Unlike Tabasco™ sauce it is more spicy (as in spiced) than hot and without the vinegary taste. If can be found in the Mexican food section of your grocery.
4 Times are approximate. You will need to adjust upwards for higher altitudes.

Hello,
Chili is one of those nice things to cook because you can get a wide variation of flavors by varying the ingredients slightly.
This particular recipe is not particularly hot--it is spicy, but that's spicy as in flavorable, not spicy as in hot.
I support if one wanted to spice it up they could add some freshly sliced jalapenos or subsitute habanero sauce for the Cholula, but that's more of an individual choice.
If cooking for others, I try to make food which is going to appeal to the majority. Getting stuck with a crock pot of chili can get tiresome after a couple of days.
Of course, a little left-over chili can serve as a great base for tomato-noodle soup, but that's another recipe...
