A Quick Green Bean Salad

This is great for a salad to share at a diner table, or have it yourself for a quick veggie meal.

1 can of french style green beans.
1 cup of fresh sliced mushrooms
1/4 cup (about six) green onions, finely cut
2 tbsp diced Pimento
1 tbsp Capers
salt and pepper, to taste (other spices may be added)

Season with Malt Vinegar and/or Italian Desssing, to taste

Let it Chill/Marinate in refrigerator for several hours before eating.

Being Diabetic and on a pretty strict 'low calorie and low fat' diet, this Green Bean salad is part of my regular diet.

I also love avocados, so adding the meat of one Hass avocado to my salad makes it just that much more yummy.

Sounds nice Shadow. I've got a relative moving in with me in a couple of weeks, and she's watching her diet and wants to move me on to a healthier lifestyle too. I do like my salads though, and since it's just coming into Spring down here I can see this one regularly making it onto the menu on warm evenings.
